Crock Pot Potato Soup


  • 1 medium yellow onion
  • 2 stalks celery
  • 2 medium carrots
  • 1 TBSP minced garlic
  • 3# potatoes
  • 2 TBSP chicken stock
  • 6 cups of water
  • 1/4 tsp. pepper
  • 2 cups milk
  • 1/4 cup flour (I like almond flour)
  • Optional*** can add flaxseed and meat
Finely dice celery and onion.    Peel then grate carrots.   Mince garlic.   Cube potatoes (1 inch or less).   Add all to crockpot.   Add chicken stock and water.   If you like meat I recommend cubing up 1-3 cups of ham, turkey, or chicken and adding it..  Cook on high for 8 hours.

Wisk in flour and 2 cups of milk.   Cook on High for 30 minutes.   Then mash the potatoes.    You can add in extra seasonings basil and parsley are two of my favorites.
