Stuffed Zucchini
- 1 TBSP sour cream
- 1/4 tsp. curry powder
- 1/4 tsp. salt
- 1/2 tomato
- 1 package bacon
- Oil/Butter
- 1 tsp. thyme and pepper
- 2 zucchinis
- 1 onion
- 1 bag shredded cheese
Pre-heat oven 400 degrees. Slice zucchinis in half lengthwise. Spoon out guts and leave 1/2 inch in. Chop zucchini pulp, 1/2 tomato and onion. Saute onions and tomatoes in oil/butter. Add 1/4 tsp. curry powder-heat 30 seconds a the end. Cook 4 slices of bacon and drain on paper towel.
In a large bowl combine 1 tsp. thyme, salt, 1 heaping TBSP sour cream, pinch of pepper, zucchini pulp, tomato, and crumble bacon. Lightly grease baking dish, put zucchini boasts in dish. Fill boats with mixture. Sprinkle cheese on top.
Put in oven 400 degrees for approximately 20 minutes. Garnish with parsley before serving.
