- 2 sticks butter
- 2 cups minced onion
- 2 cups chopped celery
- 1/4 cup chopped parsley (fresh is better, but can use dried)
- 12 cups dried bread cubes
- 4 1/2 cups chicken brother
- 2 eggs
- Seasonings (I like minced garlic, basil, oregano, chives, pepper, and a squeeze of lemon)
If you want to make homemade bread cubes you can cut or tear pieces from slices of bread (measure out by using a measuring cup for 12 cups of bread cubes). Place bread cubes in large pyrex bowl and mix in thyme, pepper, garlic, and salt for taste (or any seasonings you enjoy). Transfer to greased baking sheet (I use cooking spray). Cook uncovered in preheated oven 400 degrees for 5-10 minutes. Check bread cubes, they will be ready when they turn a nice shade of golden brown.
Melt butter in skillet and cook onion, celery, and parsley over medium heat. Spoon over bread cubes in large bowl, add seasonings, beat then mix in 2 eggs. Transfer to crock pot. Cook on High 45 minutes then cook on low 4-8 hours. Fluff with a fork and enjoy :)
