Sides Roasted Potatoes


Roasted Potatoes

  • 2# potatoes
  • 4 TBSP olive oil
  • 1/4 cup chicken broth
  • 1 TBSP minced garlic
  • 1/2 tsp. onion powder
  • 1/2 tsp. parsley, basil, thyme, and oregano
  • 1 tsp. dried mustard
  • pepper 
Preheat oven 400 degrees.   Boil potato cubes 15 minutes then drain.   Combine in bowl: 4 TBSP olive oil, 1/2 tsp thyme, oregano, basil, pepper, chopped garlic cloves, 1/2 tsp. mustard.   Pour in broth and stir.   

Put 1 layer of potatoes in baking dish and pour dressing on top until all are coated.   Bake 400 degrees for 25 min.
