Cheesecake Cupcakes Desserts

  • 2 packages cream cheese
  • 2 eggs
  • 1 tsp. vanilla extract
  • 3/4 cup sugar
  • 1 TBSP lemon juice
  • 24 vanilla wafers
  • any kind of diced fruit or pie filling (I like blueberry)
Put 1 wafer on bottom of each cupcake holder.   Mix ingredients until smooth.   Fill 3/4 of the way full and bake 15-20 minutes.   Cool in refrigerator for at least 1 hour.   Top with fruit or pie filling before serving.
