- 1/3 sticks butter
- 1 tsp. vanilla extract
- 1 1/2 cup peanut butter
- 1# (2 1/2 cups) powdered sugar
Mix above ingredients. Roll into 3/4'' balls. Place a toothpick through each ball.
Use dipping chocolate or 12oz. semisweet chips for the coating.
Line a cookie sheet with wax paper. I use a narrow pyrex cup for melting the dipping chocolate. Use a toothpick and spoon to help dip.
Melt chocolate in microwave in 20-30 second increments (stir a lot). Dip balls into melted chocolate and place on wax paper to harden. You can refrigerate to speed up hardening process.
**Tips and Options**
Keep hands cool or else the rolling process can be quite sticky. You can shave some parafin wax (about a half bar) to make them shiny.
